Quinoa and Black Bean Salad with Lemon Dressing

Ingredients:

  • 1 1/2 cups uncooked quinoa
  • 3 cups organic vegetable broth or water
  • 3 tablespoons olive oil, divided
  • 1 cup chopped fresh basil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons Dijon mustard
  • 2 teaspoons grated lemon rind
  • 1.5 cups diced red peppers
  • 1/2 cup sliced green onions
  • 1/2 cup shredded carrot
  • 15-ounce can black beans, rinsed and drained

DIRECTIONS:

Put broth/water and quinoa in a pan. Bring to a boil then reduce to low-heat, cover and simmer for 15 min. or until all liquid is absorbed. Put tofu on paper towels and squeeze out excess liquid. Put 1 tbslp. of the olive oil in a pan and saute tofu until lightly browned. Remove from heat and cool. Combine tofu, quinoa, tomatoes, beans, caroots and green onion in a large bowl. Mix in a separate bowl remaining olive oil, basil, mustard, lemon juice and rind in a bowl. Pour sauce over quinoa, stir and refridgerate.

Serves: 6

Chocolate Pudding Pie

Directions:

Preheat oven for 350 degrees.

Cut up avocado and remove pit and skin. Add avocado, bananas, coconut milk, coca powder, and vanilla to mixer. Mix well, and set aside.

Get a 9×9 baking pan. In a blender or food processor, add in coconut oil and pitted dates and pecans. Blend until you get a chunky nut texture. Take mixture out of the blender and put into a mixing bowl. Spoon in oats and cinnamon and stir. Once well-mixed, press mixture into the pan until evenly distributed. Bake in the oven at 375 for around 15 minutes, or until the top of the mixture turns slightly brown. Take out and let cool for 10-15 minutes. Spoon pudding on top of crust, and then top mixture with chopped strawberries and bananas. So tasty!

Serves 6 - 8

Ingredients:

Pudding

1 ripe small avocado or 1/2 a large avocado

1/2 cup unsweetened cocoa powder

2 ripe bananas

1/3 cup coconut milk

1 tbsp vanilla

3/4 cups of chopped strawberries

3/4 cup of chopped bananas

Crust

7 dates (pitted)

1.5 cups of organic oats

1.5 cups of pecans

1/3 cup of coconut oil, melted

1 tsp cinnamon

Mocha Frappuccino

Ingredients:

  • 1 frozen banana
  • 12 tbsps of greek yogurt
  • 1/2 cup almond milk (or milk of your choice)
  • 2 teaspoons cocoa powder
  • 1/8 cup cold espresso (if you don’t want the caffeine, omit this and add additional 1/8 cup milk)
  • 1 tablespoon almond butter

Directions:

Blend all the ingredients together, pour into a glass and enjoy!

Servings: 1
