Oatmeal Pancakes



1 cup old fashion oats

1 cup almonds (or other nut)

1 Cup low-fat plain yogurt (use diary-free if needed)

1 Cup Milk (skim, 1%, 2% almond… any kind will work)

1 tsp vanilla

2 eggs beaten

2 Tbsp Honey or Pure Maple Syrup

1 Tsp Baking Soda

1 Tsp Baking Powder

1-2 Tbsp Coconut Oil


Combine oats and nuts in a blender and pulse until almost smooth. Pur oat mixture into a large bowl and stir in yogurt, milk and vanilla and let stand overnight. Add remaining ingredients. If batter is too thick add a bit more milk. Mix all ingredients together. Add a small amount of coconut oil to large pan. Once it is melted add batter and make pancakes. Great with apple sauce or warmed berries.
