Warm Spinach Salad with Tuna


  • 4 cups baby spinach
  • 2.5 oz canned light tuna
  • 1 TBS extra virgin olive oil
  • 1 tsp fresh lemon juice
  • 1 medium clove garlic
  • sea salt and pepper to taste
  • 1/2 medium tomato diced


  1. Combine the olive oil, lemon juice, garlic, and salt and pepper to taste in a small sauce pan and heat until warm.
  2. Place spinach leaves on plate, top with tuna and tomatoes and drizzle with warm dressing.
