
Ingredients:
1/3 Cup Coconut Milk
1/3 Cup Orange Juice
1/2 cup Cubed Pineapple
1/2 Banana, Sliced
1/8 Cup Slivered Almonds
1 Tblsp Honey
1 Cup Cooked Quinoa
1 Tblsp Shredded Coconut (optional)
Directions:
Pour coconut milk and orange juice in a small pan. Add banana, stir, cover and cook for 3 minutes over low heat. Add pineapple, almonds and quinoa. Stir, cover and cook over low heat for 5 minutes (or until warmed). Pour into bowl, stir in honey and sprinkle with shredded coconut.
