Spicy Asian Shrimp
Ingredients:
1 Lb. Medium Sized Shrimp, peeled and deveined
1/4 Vegetable or Chicken Broth (low-sodium, organic is ideal)
3 Cloves of Garlic, Minced
2 Tblsp. Ginger, Minced
1/4 Cup Fresh Lemon Juice
2 Tblsp. Soy sauce or Braggs Liquid Aminio Acids (use liquid amines for gluten-free)
1/4 Cup Orange Juice
1/2 Tsp. Red Pepper Flakes
1/2 Cup Fresh Basil, Chopped
Directions:
Put broth in a pan and cook over high heat until it reaches a low boil. Turn heat to medium and add all ingredients EXCEPT shrimp and basil. Cook over medium heat for 5 min. and then add shrimp and basil and cook for 4 min. or until shrimp are just cooked. Pour over brown rice or enjoy on its own.
