Salmon with Ginger Mint Sauce



1 LB. Salmon Filet

1 Tsp Olive Oil

Salt and Pepper


2 Tomatoes, Diced and Seeds Removed

2 Tsps. Ginger, Minced

1 Tblsps. Lime Juice

1/4 Cup Chopped Fresh Mint


Heat grill to mediom heat. Rub olive oil, salt and pepper into top of salmon fillet. Cook salmon skin side on grill for about 8 minutes or until just cooked throughout. Put tomatoes, ginger, and lime into small saucepan. Cook over medium heat for 3 min.. Serve salmon topped with sauce. Sprinkle mint on top.
