Rice and Chicken Salad with Citrus Dressing


2 tbsp extra-virgin olive oil 

1 tbsp white wine vinegar

2 tbsp fresh orange juice

2 Cups cooked organic brown rice

2 cups cooked  boneless,  skinless chicken breast

1/2 cup chopped fresh basil

1/4 cup shelled pistachios 

2 ounces fresh mozzarella cheese, bite-sized pieces

2 tomatoes, diced


Combine first 3 ingredients in small bowl and whisk. Combine remaining ingredients in large bowl. Toss well. Add dressing and stir. Serve room temperature or cold.
