Fresh Salmon Tacos


2 tbs plain yogurt

1/3 cup finely diced onion

1 clove garlic, diced

2 tbs fresh lemon juice

1/3 cup chopped fresh cilantro

1 (8-oz.) salmon steak, cut into 1/2-inch pieces

Pinch of cumin

Pinch of salt

Pepper to taste

2 tbs olive oil

6 fresh corn tortillas

2 avocados, diced

1 cup shredded red cabbage

1 cup salsa


Mix the first 9 ingredients in a bowl, stirring to coat fish well. Put 2 tbs of olive oil in a large skillet.  Heat skillet on medium-high, add fish and salute for 5 to 7 minutes until desired doneness. Warm tortillas. Remove tortillas and add each with avocado. Add the salmon mixture and top with shredded cabbage and salsa. Serve immediately. 

Makes 6 tacos.
