Mashed Cauliflower


1 Small Head of Cauliflower broken into pieces, center stem removed

2 Tablespoons Olive Oil

3 Cloves Garlic, Minced

1/4 Cup Parmesan Cheese (omit for DF)

1/2 Cup Plain (or DF) Yogurt

Salt and Pepper to Taste

2 Tablespoons Chopped Chives - optional


Steam cauliflower over high heat, covered for about 20 minutes or until knife goes easily through. 

Add oil and garlic to a small pan and cook over low heat for 5 min. Garlic should be lightly browned. 

Drain cauliflower and beat with hand held mixer until cauliflower is almost smooth. Stir in garlic, oil, cheese and yogurt and then seaon with salt and pepper.
