Lemon and Parsley Pesto over Fish



1 cup of fresh parsley, stems removed
1 tablespoon of lemon zest
1 tablespoon of lemon juice
1/4 of freshly grated parmesan cheese
2 cloves of garlic, peeled
1/2 tsp. crushed red pepper flakes
1/3 cups walnuts, shelled and chopped
2 tablespoons of olive oil
1 lb. fish of your choice


Put all ingredients, except the fish, into a blender and pulse until somewhat smooth. Grill the fish and top with parsley pesto! Combine the basil, lemon zest, lemon juice, parmesan cheese, and garlic in a food processor. Blend. Add the olive oil and puree until smooth and incorporated
