Ingredients:
4 Cups Cooked Organic Brown Rice (cook according to package)
2 Cooked Boneless, Skinless Chicken Breasts, diced
1 Cup Sun-dried Tomatoes, drained
2/3 Cup Sliced Kalamate Olives
1/4 Cup Fresh Lemon Juice
1/4 Cup Olive Oil
1 Tblsp Dried or 1/4 Cup Fresh Oregano
3/4 Cup Crumbled Feta Cheese (optional)
Directions:
Mix all ingrdients together except feta cheese. Put rice mixture on plates and add crumbled feta over the top. Can be eaten warm or cold
