Chicken Greek Salad


1 head of romaine lettuce, chopped

1/2 cup fresh mint, chopped

1/2 cup fresh parsley, chopped

1 cup garbanzo beans, drained and ideally organic

2 tomatoes, diced

1/2 cup Kalamata olives

1/2 cucumber, sliced thin

1/8 cup olive oil

1/8 cup red wine vinegar

1/2 cup crumbled feta cheese (optional)

2 boneless, skinless chicken breast, chopped

sea salt and pepper to taste


Put all ingredients into a large bowl. Toss well and serve
