Brown Rice Scramble

  • 1/4 chicken or vegetable broth
  • 1/4 cup diced onions
  • 1/2 cup sliced mushrooms
  • 1/2 cooked brown rice
  • 2 eggs - beaten


Put onions and broth in a non-stick pan and saute over medium heat until onions are soft. Add mushrooms and cook additional 3 minutes. Stir in brown rice. Slowly pour eggs over rice and veggie mixture. Gently stir. Make sure to scrape the bottom of pan. Cook 5 minutes or until eggs are set.
