Baked Eggs with Zucchini & Cheese


1 Tbsp Vegetable Broth

1/3 Cup Thinly Sliced Zucchini

1/8 cup diced onions

Dash of Dried Basil

Small slice Havarti Cheese

1 Egg


Preheat over to 350°. Add broth to small sauce pan and warm over med/high heat. Add onions, zucchini and basil. Cook covered until vegetables are soft, about 4 minutes. Put vegetable and remaining liquid into a small oven safe dish. Put cheese on top of vegetables Crack egg and pour gently over cheese. Cover with foil and cook for approx. 10 minutes or until egg white is set.
