Healthy Breakfast: Veggies with a Poached Egg
This breakfast is a great way to start your day! The protein from the egg is sure to keep you full until lunch, and the vegetables add so much flavor! Enjoy this faithful workouts favorite today :)
2 Tablespoons broth (vegetable or chicken)
1 cup of packed spinach
1/2 cup sliced mushrooms
1/2 cup diced tomatoes
Pour broth in a small frying pan and add spinach, mushrooms and tomatoes. Cook over medium heat stirring often. Crack egg and gently pour on top of vegetables. Cover pan with a lid. Cook for approximately 4 min. or until egg is cooked. Garnish with whatever herbs or spices you like best, or serve with an optional side of avocado for even more flavor!
