Awesome Picnic Menu (Bonus: Gluten and Dairy Free)

Italian Sausage & Peppers


1 lb. Turkey or Elk Italian Sausage - Sliced Into Bite Size Pieces

1 Red Pepper - Diced

1 Yellow Pepper - Diced

1 Large Onion - Diced

1 Tblsp. Dried Oregano

Ground Black Pepper To Taste

1/2 Cup Water


Put water in a large pan and add sausage and then on top of sausage add peppers and onions. Cover and cook over medium heat for approx. 20 min. Check 1/2 way through cooking process to see if you need to add more water (water should just cover the bottom of the pan). Remove lid and add oregano and pepper and stir. Cook additional 5 min. Drain excess liquid. If going on a picnic put hot sausage and peppers into a large glass container (I used an empty, very large pickle container). Wrap jar in foil to keep warm.

Kale Salad



1 Bunch Kale

1 Carrot

1/3 Cup Dried Cranberries

1/3 Cup Slivered Almonds


1/4 Cup Olive Oil

1/3 Cup Rice Wine Vinegar

1 Tblsp Honey

1 Tsp. Sesame Seeds


Remove thick stem from Kale leaf. Dice the kale and put in large bowl. Peel carrot and then shave carrot into kale. Add cranberries and almonds. Mix all dressing ingredients together in separate bowl. Pour dressing over salad and stir well. 

Serves: 6 

Quino Salad


1.5 Cups Frozen, Shelled, Edamame

1 Cup Frozen Corn

2 Cups Quinoa, Cooked According to Package

2 Green Onions, Sliced

1 Red Pepper, diced

2 Tblsp. Minced Fresh Cilantro

2 Tblsp Olive Oil 

2 Tblsp Fresh Squeezed Lemon Juice

1 Tblsp Dijon Mustard

Salt and Pepper to Taste

1/2 Tsp. Chili Powder


Add edamame and corn to boiling water and cook for 1 min and drain and run cool water over and drain again. Add edamame, corn, quinoa, green onions, pepper and cilantro to a large bowl. In a small bowl mix oil, lemon juice, mustard, salt, pepper and chili powder. Mix well. Pour dressing over quinoa salad and stir well. 

Serves: 6

I put the salads in large plastic containers and sealed them tightly with a lid. I put all the food, plates, forks and serving spoons in my backpack and we hiked for about 45 minutes, put down some blankets and had a great picnic.  (My friend Eileen made the quinoa salad!!) Such a great way to get together with friends and get some exercise.
