Whole Wheat Oatmeal Pancakes



1.5 cups old fashion oats

1 Cup low-fat plain yogurt

1 Cup Milk (skim, 1%, 2% almond… any kind will work)

1 tsp vanilla

2 eggs beaten

2 Tbsp Honey or Pure Maple Syrup

1 Tsp Baking Soda

1 Tsp Baking Powder

1-2 Tbsp Coconut Oil 


Combine oats, yogurt, milk and vanilla  in a large bowl and let stand overnight. Add remaining ingredients. If better is too thick add a bit more milk. Mix all ingredients together. Add a small amount of coconut oil to large pan. Once it is melted add batter and make pancakes. Great with apple sauce or warmed berries.
