Tomato, Basil and Mozzerella Egg



1/8 Cup Vegetable Broth or 1 Tblsp. Olive Oil

1 Large Tomato, Diced

1/2 Cup Fresh Basil, Chopped

1 Slice Mozzarella (fresh mozzarella is best)

1 Egg

Salt and Pepper to taste


Put broth or oil in a small pan. Add tomatoes and basil. Crack the egg and gently place on top of tomatoes. Place cheese on top of egg. Cover and cook over medium heat until egg is cooked. Approximately 5 minutes
