Salmon with Lemon and Dill Sauce


1 pound salmon filet, wild caught

1 tblsp. olive oil

1/4 cup fresh lemon juice - divided

3/4 cup low-fat, unsweetened plain dairy-free yogurt

2 tsps. dried dill

salt and pepper to taste


Put salmon in on oven safe pan. Rub olive oil, 2 tblsp lemon juice and salt and pepper over top of salmon. Place salmon in middle of oven (approx. 12" from heat) and broil for 7-10 minutes depending on thickness of salmon. In a small sauce pan mix together yogurt, remaining lemon juice and dill. Cook over low heat until simmering. Pour sauce over salmon and serve.
