Roasted Beets


4 Medium Size Beets

1 Onion

1/2 Cup Crumbled Goat Cheese

2 Tblsps. Balsamic Vinegar

Salt and Pepper to Taste

1 Tblsp Chopped Fresh Parsley


Preheat oven to 400°. Wash beets. Cut beets and onion in 1/2 leaving onion skin on. Place beets and onion in baking dish cut side down. Cover with foil and cook for 45 min. - 1 hour. Beets are done when knife can go through beet easily. Allow beets/onion to cool. Remove outer skin from onion and dice. Peal outer skin off beets and dice. Put chopped onions and beets in bowl and add vinegar, olive oil, parsley, salt and pepper. Stir. Add crumbled goat cheese.
