Mexican Salad

Ingredients

2 cups shredded lettuce

1/4 cup black beans - Organic is best

1 tomato, diced

1/2 red pepper, diced

1/2 avocado, diced

1/4 cup cilantro, diced

Creamy Salsa Dressing: 1/2 cup salsa, 1/2 cup cottage cheese or low-fat plain yogurt. Blend together. Add low fat milk if too thick (look for dairy-free substitutions)

Put all ingredients on a plate and pour dressing over salad. 

Serves 1
