Chicken and Quinoa Burrito


2 Organic Corn or Whole Wheat Tortillas (use corn for gluten-free)

4 oz. Sliced Chicken

1 Cup Quinoa

1/2 Cup Salsa

2 Tblsps. Low-fat Plain Yogurt (or substitute dairy-free yogurt)

1 Tomato, Diced


Mix chicken, quinoa, salsa, yogurt and tomato. Place tortilla on a plate and  put 1/2 of all ingredients in the middle. Roll up the tortilla and do the same with the 2nd tortilla.
