4 Left Over Asparagus Rolls-Ups
1 Tblsp. Olive Oil
4 Eggs - Beaten
2 Tblsp. Salsa
2 Tblsp Plain Yogurt or Sour Cream
This is a great recipe to make if you have extra asparagus roll-up appetizers. If not you could just slice up turkey and cooked asparagus. Click here is the roll-up appetizer recipe. Slice roll-ups into bite-sized pieces. Pour oil into pan over medium heat. Add slide roll-ups and eggs to pan and let cook until almost set. Stir and continue stirring until eggs are cooked. Scoop onto 2 plates and top with yogurt and salsa.
