Protein Energy Bars

Blend the following in a food processor

1 C dry oatmeal

1/3 C mini semi sweet chocolate chips

½ C all natural peanut butter - can use any another butter to your taste, sunflower etc

½ C ground flax, flax meal

1/3 C honey or maple syrup

1 teaspoon vanilla

¼ C coconut oil-may need less if your pb or almond butter is very oily

10 dates, dried and pitted

1/3 C almond butter – can use any another butter to your taste, sunflower etc

You may need to scrape down the sides of the food processor and mix a second time. Mixture should hold together when pressed together. Can press mixture into ice trays or form into balls a bit smaller than a golf ball. I use a soft bendable ice tray and they pop out after they are cooled, and I store them in a plastic container. Store them in the fridge, will keep several months. Makes 16 squares. (This recipe was sent to me by Linda Bailey - thanks Linda)
