Breakfast Burritos


1 tsp. butter

2 Eggs beaten

1/4 low-fat cottage cheese

1/4 black beans

1/4 cup diced peppers

1 Whole Wheat Tortilla 

1 Tbsp Low-fat Plain Greek Yogurt

1 Tbsp Salsa


Put butter into pan and melt over med-high heat. Add eggs, cottage cheese, peppers and beans. When eggs are almost set place tortilla over eggs to warm tortilla. Remove tortilla and place egg mixture in center. Add yogurt and salsa and roll tortilla. Enjoy or wrap in foil to take with you.
